TROPICAL NO-BAKE COLLAGEN CHEESECAKE

This delicious dessert recipe is gluten free and loaded with a serving of collagen and it tastes so unbelievably good.

In this recipe I’ve used @motherkindco ‘Glow From Within’ which is a pure hydrolyzed collagen powder that is easily dissolved into any liquid. It is gluten free, dairy free, sugar & artificial flavourant free, preservative free, paleo friendly, halal making it perfect to use in any recipe.

PINEAPPLE FACTS

This tropical fruit is rich in vitamins, enzymes and antioxidants. It helps boost the immune system, build strong bones and aid indigestion. And, despite their sweetness, pineapples are low in calories.

INGREDIENTS

Cheesecake Base
• 1 tsp granulated sugar-free sweetener
• 75g almond flour
• 30g butter melted
• 25g shredded coconut

Cheesecake Filling
• 6g powdered gelatin
• 1 tbsp granulated sweetener
• 2 servings of MOTHERKIND CO. GLOW FROM WITHIN COLLAGEN
• 100 ml boiling water
• 100 ml cold water
• 250 g full fat cream cheese
• 4 tbsp fresh crushed pineapple
• 1 tbsp lemon juice

Decoration
• Toasted Coconut Flakes
• Fresh pineapple pieces
• Double cream yoghurt
• Edible flowers

Instructions
Cheesecake Base
• Mix all the ingredients and press into a greased and lined pie dish.
• Place in the fridge while making the cheesecake filling.

Pineapple Cheesecake Filling
• Pour the boiling water into a large jug and whisk in the gelatine powder and MOTHERKIND CO ‘Glow From Within’ COLLAGEN. Whisk until all dissolved.
• Add the remaining cold water.
• Add the cream cheese, crushed pineapple, lemon juice and sweetener.
• Using a stick blender with the blade attachment, blend on a slow speed until smooth and lump free.
• Pour onto the prepared base.
• Refrigerate until set.
• Serve with dollop of yoghurt, toasted coconut flakes, fresh pineapple pieces and adorn with edible flowers.

Notes:
For low-carb version of recipe, replace pineapple with fresh fruit with low-sugar content like strawberries, raspberries or blueberries.
