CARROT & GINGER COLLAGEN SOUP

Carrot & Ginger Soup

INGREDIENTS
• 1 tablespoon coconut oil
• 1 large white onion, chopped
• 3 cups low-sodium vegetable stock
• 3 servings MOTHERKIND CO. ‘Glow From Within’ Collagen
• 450g peeled carrots
• 1 tablespoon grated fresh ginger
• 1/4 cup coconut cream
• Sea salt and black pepper to taste

To garnish
• Handful of fresh coriander and mint
• 2 tablespoons of roasted peanuts, sunflower seeds
• Fresh carrot shavings

Method
• In a large pot, heat coconut oil over medium heat then add onions and cook, stirring often, until onions are soft.
• Add in the stock, MOTHERKIND ‘Glow From Within’ COLLAGEN, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are soft, about 30 minutes.
• Add coconut cream and blend using a stick blender until smooth. Bring soup back to a boil, adjust salt and pepper to your taste.
• Ladle into bowls and garnish with a little more coconut cream and fresh coriander, mint, fresh carrot shavings, roasted peanuts and seeds if desired.
